Sweet Potato Zucchini Cakes

These were impressive. Everyone in the family loved them and they got an immediate 2 thumbs up from both kids for a total of 4/4 thumbs up. I’m sure there will be a few kids that will see the green in them and refuse to even try them, but if you can at least convince them of the first bite they will be sold. It worked on my husband 😂

Ingredients:

  • 2 cups grated sweet potato (peeled and grated)
  • 1 cup grated zucchini, excess moisture squeezed out (we didn’t peel ours)
  • 3/4 cup grated cheddar cheese
  • 1 egg
  • Salt and pepper to taste
  • Spray oil

Directions:

1. Preheat oven to 400 F and line a baking sheet with parchment paper

2. Mix sweet potato, zucchini, cheese, and egg and season with salt and pepper in medium sized bowl

3. Scoop mixture onto lined baking sheet and form into small patties (ours made about 13 patties)

4. Spray top of each patty with oil

5. Bake on 400 for 25-30 minutes until golden brown. Allow to cool slightly before removing from paper
