Sweet Potato Hash

#SneakySnackSunday :Skillet Sweet Potato Hash. This one really isn’t very sneaky bc none of the veggies are hidden…But if you can convince your kids to try it hopefully they will be sold. The sweet potatoes, apples, cinnamon, and coconut oil make it taste sweet and dessert-like. You can serve it with a fried egg on top, as a side with scrambled eggs, or sometimes I add chicken to the skillet. We used to purée it for the kids when they were babies and they loved it. ⠀

Ingredients:⠀
2 sweet potatoes peeled and diced ⠀
1 apple cored, peeled, and diced ⠀
1-2 cups of kale or spinach chopped into small pieces ⠀
2 Tbs coconut oil ⠀
1/2 tsp cinnamon ⠀
Salt and pepper to taste ⠀
*can add diced onion if you want ⠀
Directions:⠀
1. Heat coconut oil in skillet on medium heat. ⠀
2. Add sweet potatoes and apples to skillet⠀
3.Cook until sweet potatoes are brown and soft⠀
4. Season with cinnamon and salt/pepper⠀
5. Add kale/spinach and let it cook down⠀
