Snickerdoodle Bombs

#SneakySnackSunday : Snickerdoodle Bombs. These are delicious. They are gluten and dairy free and were a big hit with the kids. The recipe is from @bellefitnfaithful Sugar Detox. She has a lot of other great recipes that she shares in her Sugar Detox that my kids have loved too!⠀

Ingredients:⠀
2.5 cups almond flour ⠀
1/2 cup coconut sugar ⠀
1 tsp cinnamon⠀
1 tsp baking soda ⠀
1/2 tsp salt ⠀
1 egg⠀
1/2 cup coconut oil, melted⠀
1/2 tsp pure vanilla extract ⠀
3 TBS coconut sugar plus 1 tsp cinnamon mixed together to roll the cookies in ⠀

Directions:⠀
1. Preheat oven to 350. Line baking sheet with parchment paper ⠀
2. Combine dry ingredients in a large bowl⠀
3. In a small bowl, whisk together egg, coconut oil, and vanilla ⠀
3. Pour into dry ingredients and stir until combined ⠀
4. Scoop out small portions of the mixture and roll into balls then roll in cinnamon/coconut sugar mixture and place on prepared cookie sheet. ⠀
5. Bake for 9-11 minutes ⠀
