Green Smoothie Muffins

☘️This #sneakysnacksunday is perfect for St.Patrick’s Day! You can do this recipe 2 ways- as a smoothie- or continue the rest of the steps to make the muffins. Recipe from @superhealthykids  ☘️

 

Ingredients:
1 cup of frozen mango
2 bananas
2 cups spinach
1/4 cup coconut oil
1 large egg
1 1/2 cups whole wheat flour
1/2 cup sugar
1 tsp baking soda
1 tsp cinnamon
1/8 tsp salt
Directions:
1. Preheat oven to 350
2. Blend mango, banana, and spinach
✋🏻Stop here if you want a smoothie. Add a few ice cubes, milk of choice and blend again (and turn your oven off 😜)
3. Add oil and egg to smoothie mixture
4. In a medium sized bowl combine flour, salt, cinnamon, and sugar
5. Pour smoothie mixture into bowl and stir until combined
6. Pour into paper or silicone lined muffin tray and bake for 20-25 minutes.

Side note: I have tried these with no sugar added and with oat flour instead of whole wheat, but my advice is to stick with the original recipe 👌🏻
