Double Chocolate Chip Zucchini Bread

 

Double Chocolate Chip Zucchini Bread. This one is worth making. Makes a great breakfast, snack, or dessert. Zucchini is from the Hub City Farmers Market this week. Recipe adapted from here.


Ingredients ⠀


1 1/2 cups shredded zucchini⠀
1 cup flour ⠀
1/2 cup cocoa powder⠀
1 tsp baking soda⠀
1/4 tsp baking powder⠀
1/4 tsp salt⠀
1/2 cup coconut oil (Other oils would work too) ⠀
1/4 cup honey⠀
3/4 cup coconut sugar (or brown sugar)⠀
2 eggs⠀
1 tsp vanilla⠀
1/2 cup chocolate chips⠀

Directions:⠀

Step 1: Preheat oven to 350. Grease loaf pan(s).⠀
Step 2: Squeeze excess moisture from zucchini.⠀
Step 3: In mixing bowl, combine oil, sugars and vanilla.

Step 4: Mix in eggs and squash.⠀

Step 5: Add dry ingredients to wet ingredients. Mix until just combined.⠀

Step 6: Fold in chocolate chips.⠀
Step 7: Pour batter into loaf pan(s).⠀
Step 8: Bake 40-45 minutes or until knife comes out clean.
