Raw Vegan Blueberry Cheesecake

I’ve been wanting to try some raw vegan recipes lately and this one seemed pretty easy and also like it might go over okay with the kids. It wasn’t hard to make but a little time consuming because you have to soak the cashews overnight or for at least 6-8 hours. I found this recipe on www.littleveganbear.com and changed just a couple of things about it.

I was able to get several skeptics to taste these and got several “hmm those are surprisingly good!” comments so I will call this one a win! My son gave it 2 halfway thumbs up which is better than his normal response so Ill call that one a win too.





¾ cup dates, soaked
3/4 cup almonds (original recipe called for 1/2 cup sunflower seeds and 1/4 cup almonds)

pinch of salt

White Layer:

1½ cups cashews, soaked
¼ cup agave nectar
¼ cup coconut oil, liquified
2 tsp vanilla
1Tbsp lime juice

Blueberry Layer:

1½ cups cashews, soaked
1½ cups frozen blueberries
¼ cup coconut oil, melted
¼ cup agave nectar


The original recipe called for boiling blueberries, agave, lime juice, and chia seeds in a saucepan but I just used a little natural berry jam that I had at home and put a blueberry on top of that to make it easier.


  1. Soak cashews and dates overnight or for at least 6-8 hours.
  2. Make base layer by putting ingredients for crust into food processor.
  3. Spoon base layer into small muffin tins to make a crust (I made mine pretty thin to make it go further and was able fill about 16 small muffin cups)
  4. Wash food processor and put ingredients for white layer into food processor and blend until smooth.
  5. Spoon white layer into muffin tins until about halfway full. Place tin into freezer for layers to set while mixing final layer
  6. I didnt wash the food processor before the next layer since it was similar ingredients. Put ingredients for blueberry layer into food processor and blend.
  7. Once white layer is set you can top with blueberry layer and place back into freezer until top layer is set and ready to serve.
  8. I topped with the jam and blueberry and popped back in the freezer before taking these to a party and it worked fine.
