Keto Blueberry Muffins

It has been so long since we have done a Sneaky Snack. Life has gotten busy and Sneaky Snacks just don’t make the cut anymore. But a coworker posted this keto Blueberry Muffin recipe and we had just picked some fresh blueberries that morning so I decided to give it a try. These are so easy. To be honest, the kids both gave them a thumbs down but I liked them so I thought I would post it anyway for anyone who might want to try a “keto” or grain free Blueberry muffin. A friend suggested that we use monkfruit next time instead of Stevia and they might have less of an aftertaste. So try that if you have it on hand. *Makes about 6 muffins

Ingredients

*1 1/2 cups almond flour

*1 tsp baking powder

*1/2 cup erythritol or other keto sweetener (I used Stevia but will try monkfruit next time)

*2 eggs, beaten

*3 Tbs melted butter

*1/2 tsp vanilla extract

*3 Tbs unsweetened vanilla almond milk

*1/3 cup blueberries

Directions:

1. Preheat oven to 350 and spray muffin pan

2. Mix all ingredients together then fold in blueberries (just stir ingredients together with a spoon)

3. Fill muffin tins about 3/4 full.

4. Bake at 350F for 20-25 minutes until the tops start to brown.
