Keto Blueberry Muffins

It has been so long since we have done a Sneaky Snack. Life has gotten busy and Sneaky Snacks just don’t make the cut anymore. But a coworker posted this keto Blueberry Muffin recipe and we had just picked some fresh blueberries that morning so I decided to give it a try. These are so easy. To be honest, the kids both gave them a thumbs down but I liked them so I thought I would post it anyway for anyone who might want to try a “keto” or grain free Blueberry muffin. A friend suggested that we use monkfruit next time instead of Stevia and they might have less of an aftertaste. So try that if you have it on hand. Let us know if you try them or if you make any changes to the recipe! Enjoy!

*Makes about 6 muffins

*1 1/2 cups almond flour

*1 tsp baking powder

*1/2 cup erythritol or other keto sweetener (I used Stevia but will try monkfruit next time)

*2 eggs, beaten

*3 Tbs melted butter

*1/2 tsp vanilla extract

*3 Tbs unsweetened vanilla almond milk

*1/3 cup blueberries

1. Preheat oven to 350 and spray muffin pan

2. Mix all ingredients together then fold in blueberries (just stir ingredients together with a spoon)

3. Fill muffin tins about 3/4 full.

4. Bake at 350F for 20-25 minutes until the tops start to brown.
