“Broccamole”

I’ve been meaning to try this for a while now. My daughter has always called guacamole “Broccamole” so I kept thinking I should do a sneaky snack with hidden broccoli in the guacamole. I wasn’t sure what the result would be but it was delicious. My son even skipped the chips and went straight for a spoon to eat it instead. It’s definitely worth a try, especially if you want to sneak in some veggies.

Ingredients:

  • 2 ripe avocados
  • 3/4 cup broccoli florets, chopped very thin with knife or food processor (no stems)
  • 1/2 TBS lemon juice
  • 1/2 TBS lime juice
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • Chopped Cilantro (optional)
  • Salt as needed

Directions:

  • Chop broccoli into fine bits or put in food processor to chop into small pieces
  • Mix all ingredients except avocados together
  • Chop avocados into chunks and stir into broccoli mixture, pressing with a fork but leaving some chunks
  • Add salt to taste
