Apple Cinnamon Donut Holes

#SneakySnackSunday : Gluten-Free Apple Cinnamon Donut Holes. ⠀

🍎We were given a big bag of home grown apples from our friends at @tkfamilyfarm yesterday at the @hubcityfm-so the obvious thing to do was make apple cinnamon donut holes, right? ⠀

🍎No hidden veggies, but they are baked and grain free so a little healthier than the fried version. ⠀

Recipe adapted from (Flour changed and almond milk substituted for whole milk) ⠀

1 cup diced apples (skin on)⠀
1/2 teaspoon fresh lemon juice⠀
1/2 cup almond milk⠀
2 eggs⠀
1/4 cup cane sugar⠀
1 teaspoon pure vanilla extract⠀
3 tablespoons melted butter⠀
1 cup oat flour (oats ground in food processor )⠀
1 1/2 cups gluten free flour (I used a combination of 1 1/4 cups of almond flour and 1/4 cup coconut flour)⠀
1/2 teaspoon salt⠀
1 teaspoon cinnamon⠀
1 teaspoon baking powder⠀

2 tablespoons melted butter⠀
5 tablespoons granulated sugar⠀
1 teaspoon ground cinnamon⠀

1. Preheat oven to 375 degrees.⠀ ⠀
2. Dice apples and place them in a food processor with lemon juice, milk, eggs, 1/4 cup sugar, 3 tablespoons melted butter and vanilla. Process until pureed.⠀

3. In a separate bowl, combine the oat flour and 1 1/2 cups gluten free flour, baking powder, cinnamon and salt in a bowl. ⠀

4. Slowly incorporate the wet ingredients into the dry ingredients and mix well. ⠀

5. Lightly grease a mini muffin pan ⠀

6. Fill muffin cups a little more than 3/4 of the way full⠀

7. Bake at 375 degrees for about 11-13 minutes until cooked through. Remove from oven and let cool⠀

🔶🔷You could really stop here if you wanted to keep them a little healthier because they make great muffins…but if you want the “whole” donut experience…keep going…🔷🔶⠀

8. Let the bites cool for about 10 minutes and prepare the coating.⠀ ⠀
9. Combine sugar and cinnamon in a separate bowl and mix well.⠀ ⠀
10. Melt 2 tablespoons of butter and gently brush or pour over the bites. Pour cinnamon sugar mixture over the bites and put a lid on the bowl. Shake well.⠀
