02 Dec 6 Ingredient Peanut Butter Cookies
No hidden veggies in this one but when I was deciding between veggie nuggets with hidden broccoli or a lower sugar, gluten-free peanut butter cookie…it was no contest. Maybe I’ll hide the broccoli next week, but for today cookies and almond milk by the tree was the perfect snack.
1/2 cup peanut butter
1/3 cup almond flour
1/4 cup honey
1/4 tsp baking soda
1/2 tsp pure vanilla extract
Handful of chocolate chips (optional)
1. Pre heat oven to 350 F and line baking sheet with parchment paper
2. Mix all ingredients in a mixing bowl
3. Scoop mixture onto prepared pan and shape into flattened circles.
4. Bake 8-10 minutes and allow to cool for 5-10 minutes before removing from pan.
These were so quick and easy! They got 7/8 thumbs up from the taste testers this go round. Let us know if you try them and if you have any modifications!
